From the beginning of the cultivation of the vine and the production of wine by man, wine embodies within it the relationship between man-culture-nature. I feel like we're at a point in time when this relationship has to find a new balance, and since I'm making wine in this age and place, these are the values ​​that guide me:

 

So what is AMIT TOLEDO WINE?
This is my personal wine project. In recent years I have worked in many wineries around the world that make excellent wines, and I realized that the wines I like the most are personal wines of people who in addition to excellence, embody in their wine something wider than themselves.


AMIT TOLEDO WINE was born when I felt I had something to say in a bottle.

 

  • Wines I like to drink: I make wines that I would like to drink in Israel (It's hot here). These are personal, fresh, mysterious and wild wines - wines with a distinct character, which change and develop in every sip.

  • Minimum Intervention Winemaking: Without attention, the fear from helplessness and losing of control causes us to interfere, control and manipulate the world around us, until the world we are left with often remains narrow, limited and detached.
    Minimum Intervention Winemaking as I see it, is more than just "not using additives", it is an attempt to live together with the wild forces in our world (wild plants, wildlife, microorganisms and more) instead of controlling them.
    Undisturbed systems in the natural world are often in balance, and our ability to fully understand the balance of these complex systems is very limited. From this understanding, any intervention is seriously considered before it's taken.
    To make these wines without further changing the nature of the grapes, I harvest grapes from excellent vineyards, which are cared for by farmers I trust and whose work I appreciate, mostly high altitude vineyards or Old vines, who know how to ripen healthy grapes, with balance and distinct character.


    Sustainability 
    Our planet is coming to a point of no return and I feel we do not have the privilege to continue to pass on the responsibility to the other.
    We must all think about what we can do to prevent the catastrophe while we still can.
    This is how this project is trying to reduce the negative impact on the natural systems it is part of:

   

  • Waste reduction: since 2019 all wines are without capsules (unnecessary plastic that has no real use) and all labels are fully degradable (those that are not hand-painted); The used bottles can be returned to the winery for reuse.

  • Greenhouse gas emissions: in 2019 I changed all of my bottles to ultra-light glass, which significantly reduces emissions in the wine production; reduction in unnecessary travel and transport; attempt to work as manually where possible out of a desire to reduce mechanical activity in the vineyards and winery; For now the wines are marketed only locally and are not exported for the sake of not transporting wine overseas;

  • Solar electricity: The entire winery has moved to solar electricity. Today the winery produces more electricity than it uses.

  • Working conditions: I work with fair suppliers and winegrowers who treat their employees appropriately, equitably and fairly.

Finally, out of a sincere love for nature, for the wine and the wild in our world, I strive for a gradual transition to vineyards that is 100% sustainable, with no chemical sprays and with a minimum intervention.


All my wines want is to burst inside glasses, and to be sipped with pleasure and attention.
