Adamdam 2020
Hamburg Muscat from a 38-year-old vineyard in the Alona Valley.
Alcohol: 12%
The grapes were harvested early in the morning in small crates and arrived at the winery cold, the berries were separated from the stems and put into an old barrel for spontaneous, cold and long fermentation for 60 days, on their skins.
After fermentation the berries were pressed and the wine aged for seven months, until bottled without filtration, added sulphite or any other addition.
Adamdam (hebrew for Reddish) is my favorite wine in the 2020 vintage, it is a different and interesting wine, rich, aromatic and changes over and over again during drinking so you should taste it with curiosity.
