Vermouth Spring is part of a series of seasonal vermouths, each vermouth is an attempt to bottle a single season experience in Israel as I experience it, all the ingredients are local , natural, from a responsible foragging and therefore the quantities are small each season.
Spring vermouth consists of base wine from indigenous Dabuki grapes, harvested very early, spiced only with wildflowers from foraging at different times between March and June, from the Negev to the Golan. Flowers: crowned chrysanthemum , almond, hairy bow, bong, woodland, orange, grapefruit, marigold, triple sage and medicinal rosemary. The flowers were dried, some were fermented and all were soaked in Dates alcohol . The flower extracts were measured and added to the wine along with spring honey from the Upper Galilee.
The vermouth did not undergo clarification or filtering processes to maintain its rich texture.The Vermouth is dry, floral and rich with many layers that opens slowly, it is suitable for drinking on its own, cold, with ice or in a cocktail.
