50% Sauvignon Blanc from Ben Zamra Vineyard (700 meters)
40% Semillon from the Alkosh vineyard (700 meters)
10% Chardonnay from Ben Zamra vineyard (700 meters)

Alcohol: 12.5%
The grapes arrived at the winery and went into refrigeration overnight, after which they underwent a gentle and long pressing.
After settling, the juice was put into old barrels and after a few days it began to ferment spontaneously without the addition of yeast or sulfite.
The wine matured on its lees in barrels for 7 months, was decanted and bottled without clarification & Filtration processes, and bottled with a small sulfite addition (25ppm).

The wine is deep and rich, it's Alive and changes in the glass with every sip..
