The grapes come from a Chardonnay vineyard in the volcanic "Plato" of Ben Zimara in the Upper Galilee.
The grapes were harvested early with a high natural acid, and Pressed cold as whole bunches in a long and slow pressing, and from there into a used 500L barrel for spontaneous fermentation at a cold temperature.
After six months, I added to the wine, Grape juice that i froze at harvest, and after a second spontaneous fermentation began, the wine was bottled with a crown cap to finish the second fermentation in the bottle.
The wine was aged on its lees in the bottle for 27 months.
After aging, the wine was manually disgorged and bottled without sulfite addition with a champagne cork.
Unlike most sparkling wines using the Champenoise method, no sugar, cultured yeast or sulfite was added. The resulting sparkling wine is different from classic champagnes, and has a fine bubble, a different structure and aromatic profile.
